A Great Fish Recipe

Greek-Style White Fish 

Preheat oven to 450º.


Drain 1 19 Oz. Can of tomatoes. Chop finely or blend in food processor. Use fresh tomatoes if your prefer.


Place the tomatoes in a pyrex baking dish.

Sprinkle on top of the tomatoes :


1/4  tsp dried basil

¼ tsp pepper

½ tsp sea salt

Use a fork to mix this up slightly.


Place white fish fillets (haddock, cod, whatever you like) in a single layer over the tomato mixture.


In a small bowl, mix together :

3 shallots or green onions, finely chopped

3 tsp dried parsley (or ¼ fresh)

¼ cup olive oil

2 tbsp flour (if desired, but helps to thicken the mixture slightly)

1 tsp paprika


Spoon this mixture over the fish, and spread evenly.

Bake for 15-20 minutes, according to the type of fish you have used.
