Baked Sweet Potato Latkes

2 lbs grated sweet potatoes
1 medium onion, finely chopped
2 eggs, beaten
¼ c. flour
¼ tsp. baking powder
½ tsp. salt
½ tsp. cinnamon
¼ nutmeg (optional)


1. Preheat oven to 400˚F. Spray two cookie sheets with non-stick spray.
2. In a large bowl, combine all ingredients. Drop by a quarter-cupfuls onto cookie sheet. Flatten with spatula.
3. Bake for 25 minutes; flip and bake for an additional 10 minutes.
